Peanut Butter Energy Bites

Yield: 20-24 bites

Ingredients
1 and 1/2 cups rolled oats (old-fashioned)
1/3 cup sliced almonds, finely chopped
1 tablespoon chia seeds
1 tablespoon flax seeds
3/4 cup peanut butter
2 tablespoons honey
1/4 teaspoon ground cinnamon

Cooking Directions
In a large bowl, combine oats, almonds, chia seeds and flax seeds.

In a small bowl, combine peanut butter, honey and cinnamon. Heat this mixture in microwave for 20 seconds so you can stir it together. Pour this mixture into the bowl with the dry ingredients and stir until everything is well coated.

Spray your hands with nonstick cooking spray and roll the mixture into bite-sized balls, or about 1 and 1/2 tablespoons. Pack it together as your roll into a ball. Place on baking sheet and repeat until all mixture is rolled into balls. Refrigerate for 1 hour before serving. Store in airtight container in the fridge.

Note: In case of peanut allergies, almond butter may be used in place of peanut butter.  (Note to self:  maybe a fruit butter?  Like apple or pear???)
