Cream Sauce

I use this for my Mac & Cheese recipe.  Makes 1-1/4 cups of sauce


Ingredients:
2 tablespoons of butter
2 tablespoons of flour
1 cup of milk
Salt and pepper to taste, 1/4 to 1/2 teaspoons

Directions:
Put butter and flour in the upper part of a double boiler (if you don't have one, use a sauce pain and a smaller heat-resistant bowl) having the water boil in the lower part.  Blend thoroughly.  Add milk a little at a time, stirring constantly until sauce thickens.  Cook for five minutes and then add seasonings.

This is a great base sauce.  Ideas:  onion, curry, egg, shrimp, or parsley.
