Squash Casserole
My father-in-law always made this during the holidays. I've tweaked it a little for me and Greg.
Ingredients:
1 quart of squash or 1 bag of frozen
1 chopped medium onion.
1/2 cup mayo
1/4 cup chopped green pepper (optional)
1/2 cup grated cheddar cheese
1 stick melted butter (1/2 cup)
1 sleeve of crushed crackers (your choice)
1/2 teaspoon each salt, pepper and garlic powder
Directions:
Preheat oven to 350.
Cook and drain squash. Salt, pepper and garlic powder to taste. Combine remaining ingredients. I tend to add crackers according to how the mix comes out, add more if needed. Mix gently and pour into buttered 13 x 9-inch baking dish.
Bake for 30 minutes, remove top with cheese and return for 5 minutes for it to melt.
Substitutions: Mushrooms for pepper. Can add scallions for color. Change out crackers for Cheez-Its (makes a nice crunchy topping as well). Sour cream for mayo.
